This recipe has quickly become one of my go to staple foods. It is super easy to make and very easily digestible which makes it a superb choice in my books. The zucchini hummus is so versatile too as it can be used as a dip for fresh vegetables (shown here) or it can be put into lettuce wraps, used instead of a sauce for raw pizza’s and great on raw crackers.
2 zucchini peeled and chopped
3/4 cup raw tahini
1/4 -1 /2 cup fresh lemon juice
1/4 cup of organic first cold pressed olive oil
4 cloves garlic
1 tsp – 1 tbsp sea salt
1/2 tsp ground cumin
