IMG_3663 slim Sweet & salty anyone? No, I am not talking about granola bars. This summertime salad is perfect for bringing to a BBQ.  Not to mention, any recipe that calls for mint is a plus in my book.  It’s versatile in that you can add a little to complete a main dish or it can serve as a dessert all on its own.


1/2        Watermelon (large), seeds removed (and to make it easier on your guests)
1/2 C    Feta cheese, cut into 1/2″ cubes if possible  *Vegans can substitute with a cashew based feta cheese
4 Tbsp  Spanish Organics Balsamic Glaze  I like this product because it is sugar free but you could easily create a balsamic reduction
1/4 C    Dried Mint, chopped Preparation Cut rinds off of the watermelon.  Deseed the melon and cut flesh into 1″ cubes.  From here sprinkle cubed feta cheese and chopped mint on top of watermelon.  Drizzle balsamic glaze or reduction over salad and serve.

Makes roughly 4 large servings.

Make this salad your own by adding sweet onions, sea salt & pepper, fresh parsley, black kalamata olives, fresh squeezed lemon or lime juice and/or hot sauce.
